It also helps if this food is quick and easy to prepare, allowing you to stay on track with your day. So what do you do on a grain-free diet when oatmeal is not an option? ingredients.1/4 cup finely shredded unsweetened coconut 1/4 cup uncooked quinoa (optional if you are gluten-free and not grain free) 1 tbsp ground flaxseed 2 tbsp of unsweetened applesauce, or 1/2 chopped apple Almond milk (optional) Pumpkin seeds (optional) Walnuts (optional) Cinnamon (optional) 1 cup water instructions.1. Grab a microwaveable bowl and mix finely shredded coconut with quinoa (optional), chopped apple pieces (optional) and water. Microwave for 2 minutes. If you would like this to be thicker, add longer shreds of unsweetened coconut to the mix before microwaving.
2. Mix flaxseeds and stir. Mixture will start to become thicker. Add almond milk, pumpkin seeds, walnuts, and applesauce (used as a sweetener) if desired and enjoy!
