This Canada Day came so fast that there was barely time to prepare. And because it was a Friday, all the food in the fridge was gone and of course, the grocery stores were closed for the holiday. SO I took to Pinterest to help me come up with some healthy lunch ideas with whatever ingredients I had left. This zucchini fritter recipe was simple and fast - a perfect way to get my protein and some vegetables on a holiday. STEP 1 - Mix all ingredients togetherSTEP 2 - Prepare a hot skillet with coconut oil to prevent sticking. Spoon the mixture onto skillet in pancake-size rounds.STEP 3 - Flip the fritters to cook both sides. Once cooked, plate your fritters and top with your favourite yogurt/sour cream/sauce or enjoy plain!
